Punchy Pumpkin MishMash!
A super vegelicious supper, best appreciated when feeling a little worse for wear, with a large glass of water, a duvet and a bit of Sunday evening X Factor!
Slice off the top of your pumpkin (following this, demonstration of your Banksy meets Delia carving skills is of course compulsory). Remove the seeds (tasty toasted with some salt and sugar) and scoop out the flesh
Spread the flesh out on a baking tray, add 6 halved tomatoes, a thickly sliced onion, 6 garlic cloves (vampires bewaaaaaaarrrrrrre!), vegetable oil and some mixed ‘erbs before popping it all in the oven at 180 for 40 minutes
Once cooked, set aside to cool and then blend till smooth (highly recommend investing in one of those amazing blendy soupy makers – waaaaaayyyy more fun!)
Stir in 2 tablespoons of crème fraiche and done!
Cosmic Cluster Fridge Cake!
A traditional fridge cake treat with a bit of a trick – it was gladly gobbled up by the greedy girls at work
Place 200g of digestive bics and 100g hazelnuts (best nuts in the world, fact!) in a plastic sealy bag and bash them with a rolling pin
Melt together in a pan - 150g unsalted butter, 2 tbsp cocoa powder and 2 tbsp of golden syrup
Stir in the biscuits, nuts and 50g muesli (with sultanas in it)
Press into a baking tray lined with non-stick baking paper and press down with a spoon
Melt 150g dark chocolate and some more (30g) unsalted butter in the microwave – do it ten- fifteen secs at a time to make sure it doesn’t burn!
Spoon and spread the hot chocolate over the nutty, fruity, biscuity mix and top with broken smarties!! Place in the fridge for at least 2 hours - overnight is best and then slice up into triangles!
